15-Minute Sambal Tumis

Sauté 1 cup of rempah with sliced onions, a splash of tamarind water (asam jawa), and adding palm sugar (gula melaka) to taste. Add hard-boiled eggs, prawns, or squid.

Authentic Nasi Goreng Kampung

Fry 2–3 tablespoons of rempah in a wok, toss in cold leftover rice, crisp anchovies (ikan bilis), water spinach (kangkung), and top with a fried egg.
