Belacan Fried Rice

Instruction

Garnish
1. Wash and dry all ingredients.
2.Fry an omelette and then thinly slice it.
3.Julienne the apples and mangoes.
4.Thinly slice the shallots.
 
Belacan Fried Rice:
Prepare Dried Prawns:
11. In a separate pan, stir-fry the dried prawns with 2 tablespoons of oil until they turn
brown and fragrant. Set aside.
Toast Belacan:
12.In a non-stick pan, heat oil and toast the belacan until it dries out, becomes powdery,
and emits a strong shrimp fragrance. Remove from heat and let it cool.
13.Alternatively, you can wrap the belacan in aluminum foil and air fry it for 10 minutes
at 180°C until fragrant.
Fry Rice:
14. Add the refrigerated overnight rice to the pan with the toasted belacan. This ensures
the rice is firm and not sticking together.
15.Toss the rice with the belacan until evenly mixed.
16.Season to taste with salt or other preferred seasoning.
17.Once the rice is fully cooked, stir in the chili bird’s eye and dried prawns.
 
Plating:
Plate the fried rice and with the garnishes. Add Samba Belacan sauce
 
Usage:
This Thai inspired recipe is an excellent way to use leftover rice.
To create a balanced meal, consider adding a portion of chicken or shrimp for protein.
This will gives a good balance of protein, carbohydrates, and fiber (from the fruits).
Enhance the dish by adding a portion of greens, such as cucumbers and fresh baby
tomatoes.
 
Chicken :
2 chicken breasts
2 stalks of lemongrass (white parts chopped)
A small piece of galangal
10 green chili padi (adjust to your spice preference)2 to 4 tablespoons oyster sauce (to taste)
1 to 2 tablespoons black caramel sauce (to taste)
5 garlic cloves (sliced)
2 tablespoons of oil
Prep Lemongrass and Aromatics:
1.Chop the white part of the lemongrass.
2.Slice the galangal and garlic.
 
Cooking:
3.Heat oil in a pan and stir-fry the chopped lemongrass, galangal, and garlic until
fragrant.
4.Add the chicken breasts to the pan and cook until browned.
5.Stir in the black caramel and oyster sauce to enhance the flavor and color of the
chicken.
6.Once cooked, set the chicken aside.
 
Tips:
For a healthier option, use avocado oil or non-cold pressed olive oil for stir-frying athigh heat.
Consider replacing white rice with basmati rice for a lower glycemic index, which can
help maintain stable blood sugar levels.

Garnishing:
  • 2 green unripe mangoes /2 green apples or both
  • 12 pcs small shallots

Belacan Rice:
  • 2 tablespoon SSL Belacan
  • 75g of dried prawn
  • chili bird eye green (but add to your level of spiciness preference)
  • Leftover rice 4 bowl (refrigerated overnight)
  • 2 tsp seasoning (optional – can replace with salt to taste4 tbl spoon of oil
