Super Easy Recipe Belacan Fried Chicken

  • 8 pieces chicken wings (medium size) or drums

Dry Ingredients for Marinade

  • 8–10 g belacan (adjust according to saltiness)
  • 1 tsp sugar (or to taste)
  • 1 tbsp all-purpose flour½ tsp coriander powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tbsp rice flour

Wet Ingredients for Marinade (optional)

  • 2 tsp cooking wine
  • 1 tsp oyster sauce
  • Cooking oil (as needed)

Instruction

1. Wash the chicken wings thoroughly and pat them dry with a kitchen towel.

2. Prepare the belacan:

  • Heat a pan and toast the belacan until dry, crumbly, and fragrant. Let it cool before crushing into a powder.
  • Alternatively, wrap the belacan in aluminum foil and air fry at 180°C for 10 minutes until fragrant. Allow it to cool, then crush into powder.

3. In a bowl, combine the belacan powder with all the dry ingredients. Mix well.

4. Add the chicken wings and coat evenly with the dry mixture.

5. Add the wet ingredients and mix thoroughly.

6. Marinate the chicken in the refrigerator for at least 2 hours (or longer for deeper flavor).

7. Remove from the refrigerator, mix well again, and cook using one of the following methods:

  • Heat oil in a pan and deep-fry the chicken wings until fully cooked and golden brown.

  • Place the chicken wings in the air fryer basket. Lightly spray oil over the wings.
  • Air fry at 180°C for 10 minutes, then turn the wings and cook for another 10 minutes, or until golden brown and cooked through.
